Shrimp Scampi Recipe

Shrimp scampi is a delightful and quick dish that combines tender shrimp with a rich garlic butter sauce, perfect for a weeknight dinner or a special occasion. This beginner-friendly recipe will guide you through making a delicious shrimp scampi that pairs wonderfully with pasta or crusty bread.

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)
  • 1/2 cup dry white wine or chicken broth
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 lb linguine or your favorite pasta (optional)
  • Freshly grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta (if using):
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to package instructions until al dente.
    • Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  2. Prepare the Shrimp:
    • Pat the shrimp dry with paper towels.
    • Season lightly with salt and pepper.
  3. Cook the Shrimp:
    • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
    • Add the shrimp in a single layer and cook for 2-3 minutes on each side until they turn pink and opaque.
    • Remove the shrimp from the skillet and set aside.
  4. Make the Sauce:
    • In the same skillet, melt 1/4 cup of butter over medium heat.
    • Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, but not browned.
    • Pour in the white wine (or chicken broth) and lemon juice. Bring the mixture to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  5. Combine Shrimp and Sauce:
    • Return the cooked shrimp to the skillet.
    • Toss the shrimp in the sauce to coat evenly and heat through for about 1-2 minutes.
    • Add lemon zest and chopped parsley. Stir to combine.
    • Taste and adjust seasoning with salt and pepper as needed.
  6. Serve:
    • With Pasta:
      • If serving with pasta, add the cooked pasta to the skillet with the shrimp and sauce. Toss to coat, adding reserved pasta water a little at a time if the sauce needs to be thinned.
    • Without Pasta:
      • Serve the shrimp scampi as is with a side of crusty bread to soak up the delicious sauce.
  7. Optional Garnish:
    • Sprinkle with freshly grated Parmesan cheese if desired.

Tips for Success:

  • Fresh Ingredients: Use fresh shrimp and high-quality butter for the best flavor.
  • Cooking Shrimp: Be careful not to overcook the shrimp as they can become tough. They should be pink and opaque.
  • Wine Substitute: If you prefer not to use wine, chicken broth is a good alternative.
