Pork Fried Rice Recipe
Pork fried rice is a classic Chinese dish that’s hearty, satisfying, and perfect for using up leftover rice. This recipe combines tender pork, crisp vegetables, and savory soy sauce for a delicious meal that’s ready in minutes.
Ingredients:
- 2 cups cold cooked rice (preferably day-old)
- 1/2 lb pork loin or pork tenderloin, thinly sliced
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (such as peas, carrots, and corn)
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- Sesame oil, for drizzling (optional)
Instructions:
Step 1: Prep Ingredients
- If using day-old rice, break up any clumps with your fingers to separate the grains. Freshly cooked rice can be spread out on a baking sheet to cool quickly.
Step 2: Cook the Pork
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add thinly sliced pork and cook until browned and cooked through, about 3-4 minutes. Season with salt and pepper to taste. Remove pork from skillet and set aside.
Step 3: Scramble the Eggs
- In the same skillet, add a bit more oil if needed. Pour in beaten eggs and cook, stirring gently, until scrambled and cooked through. Remove scrambled eggs from skillet and set aside with the cooked pork.
Step 4: Stir-fry Vegetables
- Add minced garlic and chopped green onions to the skillet. Stir-fry for about 1 minute until fragrant.
- Add mixed vegetables (peas, carrots, corn, etc.) and stir-fry for another 2-3 minutes until vegetables are tender-crisp.
Step 5: Combine Everything
- Return the cooked pork and scrambled eggs to the skillet.
- Add cold cooked rice to the skillet, breaking up any remaining clumps with a spatula. Stir-fry everything together for 3-4 minutes, allowing the rice to heat through and become lightly crispy.
Step 6: Season and Finish
- Drizzle soy sauce and oyster sauce (if using) over the rice mixture. Stir well to combine and evenly distribute the sauces.
- Taste and adjust seasoning with more soy sauce, salt, or pepper if needed.
Step 7: Serve
- Remove from heat and drizzle with a little sesame oil for added flavor, if desired.
- Garnish with additional chopped green onions or a sprinkle of sesame seeds before serving.
Tips:
- Preparation: Having all ingredients chopped and ready before starting stir-frying ensures quick cooking.
- Leftovers: Pork fried rice keeps well in the refrigerator for up to 3 days and makes a great lunch option.
Enjoy this homemade pork fried rice that’s bursting with flavors and textures, perfect for a quick weeknight meal or a delicious lunch option!
