Ingredients:

  • 1 cup dried lentils (green or brown), rinsed and drained
  • 2 cups vegetable broth (or water)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional, adjust to taste)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish, optional)
  • Cooked rice or naan bread, for serving

Instructions:

Step 1: Cook the Lentils

  1. In a medium pot, combine 1 cup of rinsed lentils with 2 cups of vegetable broth (or water).
  2. Bring to a boil over medium-high heat, then reduce the heat to low.
  3. Cover and simmer for 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess liquid and set aside.

Step 2: Prepare the Curry Base

  1. Heat 1 tablespoon of oil in a large skillet or pot over medium heat.
  2. Add 1 finely chopped onion and sauté until translucent, about 5-7 minutes.

Step 4: Simmer with Tomatoes and Coconut Milk

  1. Add 1 can (14 ounces) of diced tomatoes (with their juices) to the skillet. Stir well to combine with the spices and onions.
  2. Pour in 1 can (14 ounces) of coconut milk. Stir until everything is well blended and bring to a simmer.

Step 5: Combine Lentils with Curry Sauce

  1. Add the cooked lentils to the curry sauce in the skillet. Stir gently to coat the lentils with the flavorful sauce.
  2. Allow the lentil curry to simmer over low heat for 5-10 minutes, stirring occasionally, to let the flavors meld together. If the curry thickens too much, you can add a bit of water or broth to adjust the consistency.

Step 6: Season and Serve

  1. Season the lentil curry with salt and pepper to taste.
  2. Serve hot, garnished with fresh chopped cilantro if desired, alongside cooked rice or warm naan bread.
