Lentils Recipe
Lentils are not only a versatile pantry staple but also packed with protein, fiber, and essential nutrients. This simple lentil curry recipe is perfect for a wholesome and satisfying meal. Let’s get started!
Ingredients:
- 1 cup dried lentils (green or brown), rinsed and drained
- 2 cups vegetable broth (or water)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional, adjust to taste)
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish, optional)
- Cooked rice or naan bread, for serving
Instructions:
Step 1: Cook the Lentils
- In a medium pot, combine 1 cup of rinsed lentils with 2 cups of vegetable broth (or water).
- Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover and simmer for 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess liquid and set aside.
Step 2: Prepare the Curry Base
- Heat 1 tablespoon of oil in a large skillet or pot over medium heat.
- Add 1 finely chopped onion and sauté until translucent, about 5-7 minutes.
- Stir in 2 cloves of minced garlic and 1 tablespoon of minced ginger. Cook for another 1-2 minutes until fragrant.
Step 3: Add Spices
- Add 1 tablespoon of curry powder, 1 teaspoon of ground cumin, 1/2 teaspoon of ground turmeric, and 1/4 teaspoon of cayenne pepper (if using).
- Cook the spices for about 1 minute, stirring constantly, to toast them and enhance their flavors.
Step 4: Simmer with Tomatoes and Coconut Milk
- Add 1 can (14 ounces) of diced tomatoes (with their juices) to the skillet. Stir well to combine with the spices and onions.
- Pour in 1 can (14 ounces) of coconut milk. Stir until everything is well blended and bring to a simmer.
Step 5: Combine Lentils with Curry Sauce
- Add the cooked lentils to the curry sauce in the skillet. Stir gently to coat the lentils with the flavorful sauce.
- Allow the lentil curry to simmer over low heat for 5-10 minutes, stirring occasionally, to let the flavors meld together. If the curry thickens too much, you can add a bit of water or broth to adjust the consistency.
Step 6: Season and Serve
- Season the lentil curry with salt and pepper to taste.
- Serve hot, garnished with fresh chopped cilantro if desired, alongside cooked rice or warm naan bread.
Tips for Success:
- Variations: Feel free to add your favorite vegetables such as spinach, bell peppers, or carrots to the lentil curry for added nutrition and texture.
- Storage: Leftover lentil curry can be stored in an airtight container in the refrigerator for up to 4 days or frozen for longer storage.
- Adjust Heat: Control the spiciness of the curry by adjusting the amount of cayenne pepper or omitting it altogether.
Enjoy this simple and nutritious lentil curry as a comforting meal that’s both satisfying and packed with wholesome goodness!
