Goulash Recipe

Goulash is a comforting and hearty dish with roots in Hungarian cuisine. This slow cooker version allows flavors to meld together for a delicious, easy meal.

Ingredients:

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp caraway seeds (optional)
  • 2 bay leaves
  • 1 cup sour cream (for serving)
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice (for serving)

Instructions:

  1. Prepare the Beef:
    • In a large bowl, combine the flour, salt, and black pepper.
    • Add the beef cubes to the flour mixture and toss to coat evenly.
  2. Brown the Beef:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the floured beef cubes in batches and brown on all sides. Transfer browned beef to the slow cooker.
  3. Saute Vegetables:
    • In the same skillet, add chopped onion, minced garlic, and chopped bell peppers. Saute for 3-4 minutes until softened.
  4. Combine Ingredients:
    • Add the sauteed vegetables to the slow cooker with the browned beef.
    • Stir in tomato paste, diced tomatoes (with juices), beef broth, paprika, dried thyme, caraway seeds (if using), and bay leaves. Mix well to combine all ingredients.
  5. Cook:
    • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and flavors are melded together.
  6. Serve:
    • Discard bay leaves.
    • Serve the goulash hot over cooked egg noodles or rice.
    • Garnish each serving with a dollop of sour cream and chopped fresh parsley.

  • Beef Chuck: Opt for beef chuck roast as it becomes tender and flavorful when slow-cooked.
  • Paprika: Use Hungarian sweet paprika for authentic flavor, or smoked paprika for a different twist.
  • Sour Cream: Sour cream adds richness and tanginess to the dish, balancing the flavors.
