These delightful confections are named after the nut of the Ohio state tree and resemble the state tree’s nuts, hence their name. Ingredients:

  • 1 1/2 cups creamy peanut butter: Opt for a good-quality peanut butter for the best flavor and texture.
  • 1 cup unsalted butter, softened: Helps bind the mixture and adds richness.
  • 1/2 teaspoon vanilla extract: Enhances the overall flavor profile.
  • 4 cups powdered sugar: Sweetens and thickens the peanut butter filling.
  • 1/2 teaspoon salt: Balances the sweetness and enhances the peanut butter flavor.
  • 12 ounces semi-sweet or dark chocolate: Use high-quality chocolate for dipping.
  • 2 tablespoons vegetable shortening: Helps thin the chocolate for easier dipping.

Instructions:

  1. Prepare the Peanut Butter Filling:
  • In a large mixing bowl, combine the creamy peanut butter, softened butter, vanilla extract, and salt.
  • Gradually add the powdered sugar, mixing until well combined. The mixture should be thick and slightly crumbly but hold its shape when pressed together.
  1. Form the Buckeye Balls:
  • Roll the peanut butter mixture into 1-inch balls and place them on a baking sheet lined with wax paper or parchment paper.
  • Insert a toothpick into the top of each ball. This will make it easier to dip them into the chocolate later.
  1. Chill the Buckeyes:
  • Once all the balls are formed, place the baking sheet in the refrigerator for about 30 minutes to chill. Chilling helps the balls hold their shape when dipped in chocolate.
  1. Melt the Chocolate:
  • In a microwave-safe bowl, melt the chocolate and vegetable shortening in the microwave in 30-second intervals, stirring between each interval until smooth. Alternatively, use a double boiler for melting.
  1. Dip the Buckeyes:
  • Remove the chilled peanut butter balls from the refrigerator. Holding onto the toothpick, dip each ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top (resembling a Buckeye nut).
  • Place the dipped Buckeyes back on the lined baking sheet and remove the toothpick. Smooth over the toothpick hole if necessary.
  1. Set and Serve:
  • Allow the chocolate coating to set at room temperature or speed up the process by placing the Buckeyes in the refrigerator for about 15-20 minutes.
  • Once set, store the Buckeyes in an airtight container in the refrigerator. They can be served chilled or at room temperature.
