Goulash Recipe

Ingredients:
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 2 tbsp all-purpose flour

Instructions:
- Prepare the Beef:
- In a large bowl, combine the flour, salt, and black pepper.
- Add the beef cubes to the flour mixture and toss to coat evenly.
- Brown the Beef:
- Heat olive oil in a large skillet over medium-high heat.
- Add the floured beef cubes in batches and brown on all sides. Transfer browned beef to the slow cooker.
- Saute Vegetables:
- In the same skillet, add chopped onion, minced garlic, and chopped bell peppers. Saute for 3-4 minutes until softened.

- Add the sauteed vegetables to the slow cooker with the browned beef.
- Stir in tomato paste, diced tomatoes (with juices), beef broth, paprika, dried thyme, caraway seeds (if using), and bay leaves. Mix well to combine all ingredients.
- Cook:
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and flavors are melded together.
- Serve:
- Discard bay leaves.
- Serve the goulash hot over cooked egg noodles or rice.
- Garnish each serving with a dollop of sour cream and chopped fresh parsley.
